Recipe of the Week: Creole Cabbage

  
  
  

CREOLE CABBAGE

(About 8-10 servings)


Ingredients

1 small head cabbage, shredded
1 white onion, chopped
2 green peppers, chopped
1 jalapeno pepper, chopped
3 stalks celery, chopped
2 cloves fresh garlic, chopped
1 can diced tomatoes
¼ lb. bacon
¼ cup brown sugar
3 tablespoons cider vinegar
2 teaspoons paprika
salt & pepper to taste
2 tablespoons olive oil

Brown bacon.  In 6-quart pot, heat olive oil.  Add celery, green peppers, onions, jalapeno and garlic.  Cook until soft.  Add cabbage, tomatoes, brown sugar and vinegar.  Cook on low heat for 40-45 minutes or until tender.  Season to taste with paprika, salt and pepper. Enjoy!
