Recipe of the Week: Arkansas Smoked Catfish

ARKANSAS SMOKED CATFISH
(4 servings)
Ingredients
Large, whole catfishVegetable oilKosher salt
Directions
Use indirect heat by putting wood or charcoal on one side of your grill and setting it to a low temperature of about 200° F. Clean and gut catfish, if not already done at time of purchase. Brush with oil and salt lightly. Place on aluminum foil and cook on the non-heated side of the grill for about 4 hours. Serve immediately and enjoy!
