All catering packages include homemade pickles, cornbread and our sweet, hot and gold BBQ sauces.  Boneless sandwich meats include sandwich rolls.

Sandwich Meats

North Carolina Pulled Pork Boneless pork shoulder, smoked for 14 hours until it falls apart, mixed with vinegar-based BBQ sauce like you would find in eastern North Carolina.
Kansas City Burnt Ends The top of the beef brisket, chopped and cooked slowly in a sweet tomato-based BBQ sauce until the meat is tender and falling apart.
Texas Sliced Beef Brisket The leanest part of the brisket, smoked for 14 hours until very tender, sliced thinly across the grain and lightly sauced with sweet BBQ sauce.
BBQ Pulled Chicken Dry-rubbed boneless chicken thighs smoked until falling apart, mixed with a little North Carolina Vinegar BBQ sauce. 
Red Hot Smoked Sausage
A locally made, very spicy Italian pork sausage, smoked at Blue Ribbon.

 

Side Dishes

Baked Beans
Cooked from scratch for 12 hours, flavored with molasses and beef brisket trimmings.
Black-Eyed Corn
Sweet corn, black-eyed peas, tomatoes and spices cooked together. A Blue Ribbon innovation. Suitable for vegetarians.
Cole Slaw
Shredded green cabbage and carrots, mixed with vinegar and mayonnaise-based slaw dressing. Suitable for vegetarians.
Collard Greens
A big, tough leafy green, popular in Southern cooking. Cooked for 3-4 hours until tender with smoked pork bones, chicken stock, garlic, red pepper, salt & pepper.
Dirty Rice
White rice toasted with cumin, chili powder, onion, celery, garlic, chicken and chicken stock.
Green Beans
Soft, long-cooked green beans, flavored with spicy smoked pork sausage, vinegar, salt & pepper.  (Sausage can be omitted by request to make this suitable for vegetarians.)
Macaroni & Cheese
Creamy macaroni and cheese, baked casserole-style.  Suitable for vegetarians.
Mashed Potatoes
Red-skinned potatoes mashed with roasted garlic, half & half, butter, salt & pepper.  Suitable for vegetarians.
Potato Salad
Skin-on red bliss potatoes in a Southern-style yellow mustard dressing.   Suitable for vegetarians.
Rice & Beans
Corn-flavored Cantina white rice topped with Southwestern-style pinto beans.   Suitable for vegetarians.
Big Green Salad
A large salad made with green leaf and romaine lettuces, tomatoes, cucumbers, carrots, red peppers and shredded cabbage. Served with balsamic vinaigrette and caesar salad dressings.  Suitable for vegetarians when served with balsamic vinaigrette.

Vegetarians also need to eat! In addition to the side choices noted above, we also have mouth-watering Vegetarian Burritos for $4.75 each on catered orders.

Paper goods (plates, forks, knives, spoons, napkins & serving utensils) are available at a cost of 50¢ per person.  Chafing racks and canned fuel are available for $10, which includes a rack, pan and two cans of fuel.

Food allergy information:
Before placing your order, please inform your server if a person in your party has a food allergy.

No peanuts are used in our regular menu items.  The following items contain pecans: pecan pie, congo bars and dream bars.  The following items contain flour: cobblers, cornbread, dessert bars, macaroni, pies and sandwich rolls.  Worcestershire sauce may contain wheat, soy and/or fish ingredients and is used in: baked beans, burnt ends, Caesar dressing and our sweet (retail packaged as "Carolina BBQ Sauce"), hot and gold barbecue sauces.  Though best practices are used in the manufacturing of our products, items are prepared on equipment that may be shared with peanuts or tree nuts.  For allergy questions not addressed here, please contact our corporate office: (617) BIG-RIBS.
